Pan fried lemon sole with zucchini, carrot, cold potato cream, mussels and a shellfish sauce

Fairies Quail
Two preparations of quail with cream of Jerusalem artichoke, confit of red onions and a gravy of poultry and Licor 43

Rednose Roe Deer
Stir-fried roe deer with sprout leaves, pommes chateau, onion-fig chutney and a sauce of cherry beer
